Shopping List

Shallots, 6x

Champagne vinegar, 1/2 cup

Apple cider vinegar, 1/2 cup

Sugar, 1/2 cup

Water, 1/2 cup

Cinnamon, 1 stick

Star anise, 1 ea

Allspice, 1 ea

Clove, 1 ea

Green cardamom, 5 ea

Jalapeno, 1/4 ea

Bay leaf, 1/4 ea

Black peppercorns, 1/2 tsp

Coriander, 1/2 tsp

Mustard seed, 1/4 tsp

Kosher salt, to taste

Prep

  1. Peel and slice the shallots

How to cook

  1. Place the vinegar, sugar, water, spices, and pinch of salt in a small saucepan.
  2. Bring to the boil.
  3. Remove the pot from the heat and allow the liquid to steep for 20 minutes.
  4. Bring the pot back to a boil and strain the pickling liquid over the shallots.
  5. Allow the shallots to cool and then reserve for any recipes!
