Shopping List

Dried apricots, ¾ cup

Fresh peach, 1x

Fresh thyme, ½ bunch

Fresh sage, ½ bunch

Onion powder, ½ teaspoon

Garlic powder, ½ teaspoon

Aleppo pepper, 2 teaspoon

Shelled pistachios, ¼ cup

Orange juice, 6 ounces

Balinese Truffle Salt, to taste

Lime, 1x

Wheel Mt. Tam, 1x

Truffle Honey, to taste

Madeira/Cognac/Brandy/Whiskey or any high proof alcohol, 2 ounces

Prep

  1. Preheat your oven to 350F.
  2. Finely dice the dried apricots and the fresh peach.
  3. Pick and chop the thyme and sage.
  4. Chop the pistachios.

How to cook

  1. In a small pot over medium heat, stir together the apricots, most of the OJ, a pinch of salt, a tablespoon each of the thyme and sage, and half of each of chili flakes, onion powder, garlic powder, and chili powder.
  2. Once most of the liquid has cooked off, turn off the heat. Add the alcohol and use your lighter to flambé!!!
  3. After the flame has died down, zest in the lime. Squeeze in the lime juice and the remaining orange juice and stir to combine.
  4. Add the brie to a baking dish. Top with the fruity concoction and bake until very soft, about 5-7 minutes.
  5. Take out of the oven and top with more fresh herbs and the pistachios! Grab your favorite crackers and dig in!
